Steps to make Malvani chicken:
- Heat oil in a skillet. Add ghee (optional) Add one half of chopped onions and roast on medium flame for 7-10 mins (NOT burnt or caramelised translucent) Stir occasionally
- Add dessicated coconut and spices (nutmeg, cinnamon, cloves, elachi, peppercorn, cumin, coriander and sesame seeds) and stir continuously. Prevent coconut from sticking to surfaces; keep stirring till mix turns brown. Keep flame on medium high. Add little ghee/ oil if needed. This process will take about 5-7 mins
- Once dry roasted and browned, set aside to cool. Once cooled, blend this to make a fine paste. Set aside.
- In same skillet, heat oil. Add ghee if preferred. Add green chillies, bay leaf and saute for couple of minutes on low-medium flame.
- Add other half of onion and saute till translucent/ slightly browned. Add tomato to this and mix on medium-high flame. Stir continuously to ensure tomato does NOT releases juices and cook in it, but turns brown (5-7 minutes)
- After this, Malvani paste and mix. Add in the marinated chicken and stir gently. Add salt, chilli powder/ garam masala/ pepper to taste/ water depending on preferred thickness of gravy. Add 2-3 tbsp of water. Close lid and cook on low flame for 20-25 minutes. Stir occasionally.
- Take off flame, squeeze lemon, stir gently.
- Garnish with coriander leaves and dessicated coconut
- Notes:
- If using mutton, or chicken with bones, cook the curry in a pressure cooker. Add the gravy with the meat in a cooker. Close lit with whistle and wait for 1 whistle. Cook on low for 20 minutes in cooker. Let it cool completely before taking off the lid.
